Ingredients:

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 2 large overripe bananas, mashed
  • 2 large eggs
  • 1 1/2 cups whole milk
  • 1/3 cup unsalted butter, melted and cooled
  • 1 tsp vanilla extract

Instructions:

  1. In a large bowl, combine the flour, baking powder, salt, and cinnamon. Whisk until well distributed.
  2. In a medium bowl, mash the bananas with a fork until smooth. Whisk in the eggs, milk, melted butter, and vanilla extract until the mixture is velvety.
  3. Pour the wet mixture into the dry ingredients. Stir gently with a spatula just until combined; do not over-mix.
  4. Preheat your waffle iron to medium-high and lightly grease with cooking spray or butter.
  5. Pour about 1/4 cup of batter onto the center of the iron. Close the lid and cook until steam stops billowing from the sides and the exterior is deep mahogany brown.
  6. Remove waffles carefully. To keep warm, place in a single layer on a wire rack over a baking sheet in a 200°F (93°C) oven.
