Ingredients:
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 2 large overripe bananas, mashed
- 2 large eggs
- 1 1/2 cups whole milk
- 1/3 cup unsalted butter, melted and cooled
- 1 tsp vanilla extract
Instructions:
- In a large bowl, combine the flour, baking powder, salt, and cinnamon. Whisk until well distributed.
- In a medium bowl, mash the bananas with a fork until smooth. Whisk in the eggs, milk, melted butter, and vanilla extract until the mixture is velvety.
- Pour the wet mixture into the dry ingredients. Stir gently with a spatula just until combined; do not over-mix.
- Preheat your waffle iron to medium-high and lightly grease with cooking spray or butter.
- Pour about 1/4 cup of batter onto the center of the iron. Close the lid and cook until steam stops billowing from the sides and the exterior is deep mahogany brown.
- Remove waffles carefully. To keep warm, place in a single layer on a wire rack over a baking sheet in a 200°F (93°C) oven.
