Ingredients:

  • 2 lbs Apples (Mix of Granny Smith and Golden Delicious), finely diced
  • 2 tbsp Lemon juice
  • 1/4 cup Coconut sugar
  • 1 tsp Ground cinnamon
  • 1/4 tsp Ground nutmeg
  • 1 tbsp Cornstarch
  • 2 1/2 cups All-purpose flour
  • 1 cup Unsalted butter, chilled and cubed
  • 1/2 tsp Salt
  • 8 tbsp Ice-cold water

Instructions:

  1. Peel and core the apples, cutting them into very small, uniform cubes (approx. 1/4 inch).
  2. In a medium bowl, toss the diced apples with lemon juice, coconut sugar, cinnamon, nutmeg, and cornstarch until the fruit is evenly coated.
  3. Let the filling sit for 5–10 minutes to allow the cornstarch to hydrate and the apples to release a small amount of natural syrup.
  4. Pulse flour, salt, and cold butter in a food processor (or use a pastry cutter) until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
  5. Gradually add ice water, one tablespoon at a time, stirring until the dough just begins to clump together.
  6. Shape dough into a disk, wrap in plastic, and refrigerate for 30 minutes.
  7. Roll the dough on a floured surface to 1/8-inch thickness. Use a 3-inch cutter to stamp out 24 circles.
  8. Gently press each dough circle into the cups of a greased muffin tin.
