Ingredients:
- 2 lbs Apples (Mix of Granny Smith and Golden Delicious), finely diced
- 2 tbsp Lemon juice
- 1/4 cup Coconut sugar
- 1 tsp Ground cinnamon
- 1/4 tsp Ground nutmeg
- 1 tbsp Cornstarch
- 2 1/2 cups All-purpose flour
- 1 cup Unsalted butter, chilled and cubed
- 1/2 tsp Salt
- 8 tbsp Ice-cold water
Instructions:
- Peel and core the apples, cutting them into very small, uniform cubes (approx. 1/4 inch).
- In a medium bowl, toss the diced apples with lemon juice, coconut sugar, cinnamon, nutmeg, and cornstarch until the fruit is evenly coated.
- Let the filling sit for 5–10 minutes to allow the cornstarch to hydrate and the apples to release a small amount of natural syrup.
- Pulse flour, salt, and cold butter in a food processor (or use a pastry cutter) until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
- Gradually add ice water, one tablespoon at a time, stirring until the dough just begins to clump together.
- Shape dough into a disk, wrap in plastic, and refrigerate for 30 minutes.
- Roll the dough on a floured surface to 1/8-inch thickness. Use a 3-inch cutter to stamp out 24 circles.
- Gently press each dough circle into the cups of a greased muffin tin.
