Ingredients:
- 3 large overripe bananas, mashed (approx. 12 oz / 340g)
- 2 cups (480ml) heavy whipping cream, chilled
- 1 cup (240ml) whole milk, chilled
- 3/4 cup (150g) granulated sugar
- 1 tsp (5ml) pure vanilla extract
- 1/4 tsp (1.5g) fine sea salt
- 1 cup (120g) vanilla wafer cookies, roughly crushed
- 1/2 cup (60g) sliced bananas, fresh
Instructions:
- Place the mashed bananas, sugar, and salt into your blender. Process on high until the mixture is completely smooth and the sugar has dissolved into a pale, golden syrup.
- Pour in the heavy cream, whole milk, and vanilla extract. Pulse for 10–15 seconds just until combined, avoiding over-blending to prevent the cream from thickening into butter.
- Pour the mixture into your ice cream maker and churn according to the manufacturer's instructions (usually 20–25 minutes) until it reaches a soft-serve consistency.
- Using a silicone spatula, gently fold in the crushed vanilla wafers and sliced bananas until distinct pockets of cookie and fruit are distributed.
