Ingredients:

  • 3 large overripe bananas, mashed (approx. 12 oz / 340g)
  • 2 cups (480ml) heavy whipping cream, chilled
  • 1 cup (240ml) whole milk, chilled
  • 3/4 cup (150g) granulated sugar
  • 1 tsp (5ml) pure vanilla extract
  • 1/4 tsp (1.5g) fine sea salt
  • 1 cup (120g) vanilla wafer cookies, roughly crushed
  • 1/2 cup (60g) sliced bananas, fresh

Instructions:

  1. Place the mashed bananas, sugar, and salt into your blender. Process on high until the mixture is completely smooth and the sugar has dissolved into a pale, golden syrup.
  2. Pour in the heavy cream, whole milk, and vanilla extract. Pulse for 10–15 seconds just until combined, avoiding over-blending to prevent the cream from thickening into butter.
  3. Pour the mixture into your ice cream maker and churn according to the manufacturer's instructions (usually 20–25 minutes) until it reaches a soft-serve consistency.
  4. Using a silicone spatula, gently fold in the crushed vanilla wafers and sliced bananas until distinct pockets of cookie and fruit are distributed.
