Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup sour cream
- 1 cup overripe bananas, mashed
- 1 1/2 cups zucchini, grated
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line with parchment paper. Grate zucchini using the large holes of a box grater; do not squeeze out the water.
- In a large bowl, whisk together vegetable oil, sugar, eggs, and vanilla until smooth and pale. Stir in the sour cream and mashed bananas until creamy, then fold in the grated zucchini.
- Sift the flour, baking soda, cinnamon, and salt directly into the wet mixture. Gently fold the ingredients together using a spatula until no streaks of white flour remain.
- Pour batter into the prepared pan and smooth the top. Bake for 60 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.
