Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 1 cup overripe bananas, mashed
  • 1 1/2 cups zucchini, grated
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line with parchment paper. Grate zucchini using the large holes of a box grater; do not squeeze out the water.
  2. In a large bowl, whisk together vegetable oil, sugar, eggs, and vanilla until smooth and pale. Stir in the sour cream and mashed bananas until creamy, then fold in the grated zucchini.
  3. Sift the flour, baking soda, cinnamon, and salt directly into the wet mixture. Gently fold the ingredients together using a spatula until no streaks of white flour remain.
  4. Pour batter into the prepared pan and smooth the top. Bake for 60 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.
