Ingredients:

  • 250g Classic Vanilla Animal Crackers
  • 150g Waffle-style Pretzels
  • 100g Toasted Oat Cereal
  • 100g Salted Roasted Peanuts or Cashews
  • 115g Unsalted Butter
  • 100g Clear Honey or Maple Syrup
  • 50g Light Brown Sugar, packed
  • 5g Ground Cinnamon
  • 2g Sea Salt
  • 1g Baking Soda
  • 100g Candy-coated Chocolate Buttons
  • 50g Dried Banana Chips, lightly crushed

Instructions:

  1. Preheat your oven to 150°C. In a large mixing bowl, combine the animal crackers, waffle pretzels, toasted oat cereal, and roasted nuts. Toss gently to distribute evenly.
  2. In a small heavy-bottomed saucepan over medium heat, combine the unsalted butter, honey, brown sugar, cinnamon, and sea salt. Bring to a gentle simmer, whisking constantly for 2 minutes until the sugar is dissolved.
  3. Remove the saucepan from heat and quickly whisk in the baking soda until the mixture foams slightly. Immediately pour the warm glaze over the dry ingredients in the mixing bowl.
  4. Using a heat-resistant spatula, fold the mixture until every piece is glossy and thoroughly coated in the glaze.
  5. Spread the mix in a single layer on a parchment-lined rimmed baking sheet. Bake for 15 minutes, tossing halfway through, until the glaze is set and the mixture smells toasted.
  6. Remove from the oven and allow to cool completely on the tray. Once cooled, toss in the candy-coated chocolate buttons and crushed banana chips.
