Ingredients:

  • 6 cups seedless watermelon, cubed and chilled
  • 1 tbsp lime zest, finely grated
  • 1/2 cup fresh-squeezed lime juice
  • 1/4 cup honey
  • 1/4 tsp sea salt
  • 1 lime, sliced into rounds
  • 1 cup fresh watermelon spheres or small cubes
  • 10 fresh mint leaves

Instructions:

  1. Place the chilled watermelon cubes into the blender. Pulse on high for 45-60 seconds until the mixture is completely smooth and vibrant red.
  2. Position a fine-mesh strainer over a large pitcher. Pour the blended watermelon through the sieve, using a spoon to gently press the solids to extract all juice, then discard the pulp.
  3. Whisk in the fresh lime juice, honey, and sea salt. Stir vigorously for 30 seconds until the sweetener is fully incorporated and the liquid is glossy.
  4. Garnish each glass with lime rounds, watermelon spheres, and fresh mint leaves before serving.
