Ingredients:
- 6 cups seedless watermelon, cubed and chilled
- 1 tbsp lime zest, finely grated
- 1/2 cup fresh-squeezed lime juice
- 1/4 cup honey
- 1/4 tsp sea salt
- 1 lime, sliced into rounds
- 1 cup fresh watermelon spheres or small cubes
- 10 fresh mint leaves
Instructions:
- Place the chilled watermelon cubes into the blender. Pulse on high for 45-60 seconds until the mixture is completely smooth and vibrant red.
- Position a fine-mesh strainer over a large pitcher. Pour the blended watermelon through the sieve, using a spoon to gently press the solids to extract all juice, then discard the pulp.
- Whisk in the fresh lime juice, honey, and sea salt. Stir vigorously for 30 seconds until the sweetener is fully incorporated and the liquid is glossy.
- Garnish each glass with lime rounds, watermelon spheres, and fresh mint leaves before serving.
