Ingredients:

  • 1/2 cup (60g) all-purpose flour
  • 1 tablespoon (8g) cornstarch
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1 pinch sea salt
  • 2 tablespoons (30g) plain 2% Greek yogurt
  • 3 tablespoons (45ml) whole milk
  • 1 tablespoon (15ml) melted butter
  • 1/4 teaspoon pure vanilla extract
  • 1 teaspoon (7g) maple syrup

Instructions:

  1. Plug in your waffle iron and let it heat for at least 5 to 7 minutes.
  2. Whisk 1/2 cup all purpose flour, 1 tablespoon cornstarch, 1/2 teaspoon baking powder, 1/8 teaspoon baking soda, and a pinch of salt. Note: Whisking thoroughly aerates the flour for a lighter crumb.
  3. Combine 2 tablespoons Greek yogurt, 3 tablespoons milk, 1/4 teaspoon vanilla, and 1 teaspoon maple syrup in a separate small jar.
  4. Melt the 1 tablespoon of butter in the microwave and whisk it into the wet ingredients.
  5. Pour the wet mixture into the dry ingredients and fold gently with a spoon. Stop as soon as the streaks of flour disappear.
  6. Lightly brush the iron with a tiny bit of oil or butter, even if it is non stick.
  7. Pour the batter into the center of the iron. Listen for that immediate sizzle.
  8. Close the lid and cook for 4 to 5 minutes until the steam stops escaping the sides.
  9. Lift the lid carefully. The waffle should be golden brown and firm to the touch.
  10. Transfer to a wire rack for 30 seconds before serving.
