Ingredients:
- 3 ripe bananas, mashed (approx. 300g)
- 1 cup (100g) grated zucchini, lightly squeezed
- 1/2 cup (120ml) sour cream
- 1/2 cup (115g) unsalted butter, melted and cooled
- 2 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 3/4 cup (150g) light brown sugar, packed
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1g) ground nutmeg
- 1/2 cup (60g) chopped walnuts
- 1/2 cup (85g) semi-sweet chocolate chips
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
- Grate zucchini using the medium holes of a box grater; gently squeeze with a paper towel to remove excess water.
- Mash bananas in a small bowl until mostly smooth with a few small lumps for texture.
- In a large bowl, whisk together the melted butter and brown sugar until smooth.
- Stir in the eggs, sour cream, vanilla, mashed bananas, and grated zucchini.
- In a separate bowl, sift together the all-purpose flour, baking soda, salt, cinnamon, and nutmeg.
- Fold the dry ingredients into the wet base using a spatula. Mix only until the white streaks of flour disappear to avoid overmixing.
- Fold in the chopped walnuts and semi-sweet chocolate chips.
- Pour the batter into the prepared loaf pan and bake for 55 minutes, or until a toothpick inserted into the center comes out clean.
