Ingredients:

  • 3 ripe bananas, mashed (approx. 300g)
  • 1 cup (100g) grated zucchini, lightly squeezed
  • 1/2 cup (120ml) sour cream
  • 1/2 cup (115g) unsalted butter, melted and cooled
  • 2 large eggs, room temperature
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 3/4 cup (150g) light brown sugar, packed
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 tsp (2g) ground cinnamon
  • 1/4 tsp (1g) ground nutmeg
  • 1/2 cup (60g) chopped walnuts
  • 1/2 cup (85g) semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
  2. Grate zucchini using the medium holes of a box grater; gently squeeze with a paper towel to remove excess water.
  3. Mash bananas in a small bowl until mostly smooth with a few small lumps for texture.
  4. In a large bowl, whisk together the melted butter and brown sugar until smooth.
  5. Stir in the eggs, sour cream, vanilla, mashed bananas, and grated zucchini.
  6. In a separate bowl, sift together the all-purpose flour, baking soda, salt, cinnamon, and nutmeg.
  7. Fold the dry ingredients into the wet base using a spatula. Mix only until the white streaks of flour disappear to avoid overmixing.
  8. Fold in the chopped walnuts and semi-sweet chocolate chips.
  9. Pour the batter into the prepared loaf pan and bake for 55 minutes, or until a toothpick inserted into the center comes out clean.
