Ingredients:
- 3 ripe bananas (approx. 300g), medium-sized
- 1 cup (125g) all-purpose flour
- 2 tbsp (25g) light brown sugar, packed
- 1 tsp (5g) baking powder
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1g) ground nutmeg
- 1/4 tsp (1g) ground cloves
- 1/4 tsp (1.5g) fine sea salt
- 1/4 cup (60ml) whole milk
- 1 tsp (5ml) pure vanilla extract
- 2 cups (480ml) neutral oil
- 1 tbsp (8g) powdered sugar
Instructions:
- Peel the bananas in a large bowl and mash them with a fork, leaving small, pea-sized lumps. Stir in the milk and vanilla extract until just combined.
- In a separate medium bowl, whisk together the flour, brown sugar, baking powder, cinnamon, nutmeg, cloves, and salt. Slowly fold the dry ingredients into the banana mixture until flour streaks disappear.
- Heat the neutral oil in a skillet to 350°F (175°C). Carefully scoop 2-tablespoon portions of batter into the oil and fry for 2-3 minutes per side until deep mahogany-gold.
- Transfer the fritters to a wire rack lined with paper towels to drain for 60 seconds. While still warm, lightly dust with powdered sugar.
