Ingredients:

  • 3 ripe bananas (approx. 300g), medium-sized
  • 1 cup (125g) all-purpose flour
  • 2 tbsp (25g) light brown sugar, packed
  • 1 tsp (5g) baking powder
  • 1 tsp (2g) ground cinnamon
  • 1/4 tsp (1g) ground nutmeg
  • 1/4 tsp (1g) ground cloves
  • 1/4 tsp (1.5g) fine sea salt
  • 1/4 cup (60ml) whole milk
  • 1 tsp (5ml) pure vanilla extract
  • 2 cups (480ml) neutral oil
  • 1 tbsp (8g) powdered sugar

Instructions:

  1. Peel the bananas in a large bowl and mash them with a fork, leaving small, pea-sized lumps. Stir in the milk and vanilla extract until just combined.
  2. In a separate medium bowl, whisk together the flour, brown sugar, baking powder, cinnamon, nutmeg, cloves, and salt. Slowly fold the dry ingredients into the banana mixture until flour streaks disappear.
  3. Heat the neutral oil in a skillet to 350°F (175°C). Carefully scoop 2-tablespoon portions of batter into the oil and fry for 2-3 minutes per side until deep mahogany-gold.
  4. Transfer the fritters to a wire rack lined with paper towels to drain for 60 seconds. While still warm, lightly dust with powdered sugar.
