Ingredients:
- 6 cups seedless watermelon, cubed and chilled
- 1 tbsp fresh lime juice
- 4 fresh mint leaves
- 4 lime wheels
Instructions:
- Cut the seedless watermelon into 1-inch cubes, discarding the rind. Ensure the watermelon has been refrigerated for at least 4 hours prior to blending for maximum chill.
- Place the watermelon cubes and lime juice into a high-speed blender. Start on a low setting to break up chunks, then increase to high for 30–45 seconds until the mixture is completely smooth.
- Pour the blended puree through a fine-mesh strainer into a large glass pitcher, using a spoon to press the pulp firmly against the mesh to extract all juice.
- Pour the juice into chilled glasses and garnish each with a fresh mint leaf and a lime wheel.
