Ingredients:
- 1.5 cups all-purpose flour

- 0.5 cup granulated white sugar
- 0.5 cup packed light brown sugar
- 0.5 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 1.5 cups grated zucchini
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper. Grate the zucchini using the large holes of a box grater.
- In a large bowl, whisk together the flour, baking soda, salt, cinnamon, granulated sugar, and light brown sugar.
- Combine the vegetable oil, egg, and vanilla extract in a separate bowl, then fold the wet ingredients into the dry ingredients until a thick batter forms.
- Gently stir in the shredded zucchini until evenly distributed, stopping immediately when no streaks of flour remain to avoid overmixing.
- Pour the batter into the prepared pan, smoothing the top with a spatula. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
