Ingredients:

  • 1.5 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
  • 0.5 cup granulated white sugar
  • 0.5 cup packed light brown sugar
  • 0.5 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1.5 cups grated zucchini

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper. Grate the zucchini using the large holes of a box grater.
  2. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, granulated sugar, and light brown sugar.
  3. Combine the vegetable oil, egg, and vanilla extract in a separate bowl, then fold the wet ingredients into the dry ingredients until a thick batter forms.
  4. Gently stir in the shredded zucchini until evenly distributed, stopping immediately when no streaks of flour remain to avoid overmixing.
  5. Pour the batter into the prepared pan, smoothing the top with a spatula. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
