Ingredients:

  • 2 lbs sweet potatoes, peeled and cubed
  • 2 tbsp neutral oil
  • 1 tsp ground cumin
  • 1 tsp turmeric powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh lime juice
  • 2 tbsp fresh cilantro, chopped

Instructions:

  1. Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Peel the sweet potatoes and cut them into uniform 1/2-inch cubes.
  3. In a large mixing bowl, combine the neutral oil, ground cumin, turmeric powder, smoked paprika, garlic powder, salt, and black pepper.
  4. Add the cubed sweet potatoes to the bowl and toss vigorously until every surface is evenly coated in the spice oil.
  5. Spread the potatoes in a single layer on the prepared baking sheet, ensuring they are not touching to allow for maximum airflow.
  6. Roast for 25-30 minutes until the edges are deep mahogany brown and a nutty aroma is present.
  7. Remove from the oven and immediately drizzle with fresh lime juice. Garnish with chopped cilantro before serving.
