Ingredients:
- 2 lbs sweet potatoes, peeled and cubed
- 2 tbsp neutral oil
- 1 tsp ground cumin
- 1 tsp turmeric powder
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh lime juice
- 2 tbsp fresh cilantro, chopped
Instructions:
- Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- Peel the sweet potatoes and cut them into uniform 1/2-inch cubes.
- In a large mixing bowl, combine the neutral oil, ground cumin, turmeric powder, smoked paprika, garlic powder, salt, and black pepper.
- Add the cubed sweet potatoes to the bowl and toss vigorously until every surface is evenly coated in the spice oil.
- Spread the potatoes in a single layer on the prepared baking sheet, ensuring they are not touching to allow for maximum airflow.
- Roast for 25-30 minutes until the edges are deep mahogany brown and a nutty aroma is present.
- Remove from the oven and immediately drizzle with fresh lime juice. Garnish with chopped cilantro before serving.
