Ingredients:

  • 6 cups (900g) seedless watermelon, cubed and chilled
  • 1 tbsp (15ml) fresh lime juice
  • 6 large fresh mint leaves

Instructions:

  1. Cut the watermelon into 1-inch cubes and remove as many black seeds as possible.
  2. Place the watermelon cubes, lime juice, and mint leaves into a high-speed blender or food processor.
  3. Pulse the mixture 5-7 times to break down the large chunks.
  4. Blend on medium-high for 30-45 seconds until the mixture is uniform; avoid over-blending to prevent excessive foam.
  5. For a rustic finish, pour the juice directly into glasses. For a professional clarity, pour the mixture through a fine-mesh strainer into a pitcher.
  6. Garnish each glass with a fresh mint sprig and a thin lime wheel on the rim.
