Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (2g) baking powder
- 2 tsp (10g) pumpkin pie spice
- ½ tsp (3g) salt
- 1 cup (240ml) pumpkin puree
- ½ cup (120ml) vegetable oil
- ¾ cup (150g) brown sugar, packed
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 8 oz (225g) full-fat cream cheese, softened
- ¼ cup (50g) granulated sugar
- 1 large egg
- 1 tsp (5ml) vanilla extract
- Pinch of salt
Instructions:
- In a medium bowl, beat the softened cream cheese and granulated sugar until the mixture is completely smooth and no lumps remain.
- Whisk in the egg, vanilla extract, and salt until the filling looks glossy and pale. Set aside.
- Preheat your oven to 375°F (190°C) and line a standard 12-cup muffin tin with paper liners.
- In a large bowl, whisk together the flour, baking soda, baking powder, pumpkin spice, and salt.
- In a separate bowl, combine the pumpkin puree, oil, brown sugar, eggs, and vanilla.
- Gently fold the dry ingredients into the wet ingredients using a spatula. Mix only until just combined; do not over-work the batter.
- Fill each muffin liner about 1/3 of the way with pumpkin batter.
- Dollop 1 generous tablespoon of the cream cheese mixture into the center of each muffin.
- Top with the remaining pumpkin batter until the liners are 3/4 full.
- Use a toothpick or knife to gently swirl the filling for a marbled effect.
- Bake for 18–20 minutes.
