Ingredients:
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1 tsp ground cinnamon
- 4 tbsp cold unsalted butter, cubed
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 2 tsp ground cinnamon
- 1 tsp pumpkin pie spice
- 1/2 tsp salt
- 1 cup pumpkin purée
- 1/2 cup neutral oil
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups firm apple, peeled and finely diced
Instructions:
- Preheat oven to 425°F (218°C) and line a muffin tin with liners.
- In a small bowl, combine 1/2 cup flour, 1/2 cup brown sugar, and 1 tsp cinnamon. Rub cold butter into the mixture using a fork or fingers until coarse crumbs form. Set aside.
- Toss diced apples in a small bowl with 1 tablespoon of the measured batter flour until lightly coated.
- In a large bowl, whisk together the remaining flour, baking soda, baking powder, cinnamon, pumpkin pie spice, and salt.
- In a separate bowl, whisk together pumpkin purée, oil, sugar, eggs, and vanilla until smooth and emulsified.
- Gently fold the wet ingredients into the dry ingredients using a spatula until just combined; do not overmix.
- Gently fold in the flour-coated apple chunks.
- Divide the batter among the muffin liners, top with the cinnamon streusel, and bake for 25 minutes.
