Ingredients:

  • 15 oz pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 2 cups diced fresh apples
  • 1/2 cup all-purpose flour (for streusel)
  • 1/4 cup brown sugar
  • 1/2 tsp ground cinnamon (for streusel)
  • 3 tbsp unsalted butter

Instructions:

  1. Preheat oven to 350°F (175°C). In a large bowl, whisk together the pumpkin puree, sugar, vegetable oil, and eggs until smooth.
  2. Sift the flour, baking soda, cinnamon, nutmeg, and salt into the wet mixture. Gently fold with a spatula until no streaks of white flour remain.
  3. Gently stir in the diced fresh apples and pour the batter into a prepared 9x5 inch loaf pan, smoothing the top.
  4. In a small bowl, rub cold cubed butter into the flour, brown sugar, and cinnamon using fingertips until it resembles coarse sand. Sprinkle evenly over the batter.
  5. Bake for 60 to 70 minutes until a toothpick inserted into the center comes out clean and the top is deep mahogany-brown.
