Ingredients:
- 15 oz pumpkin puree
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 2 cups diced fresh apples
- 1/2 cup all-purpose flour (for streusel)
- 1/4 cup brown sugar
- 1/2 tsp ground cinnamon (for streusel)
- 3 tbsp unsalted butter
Instructions:
- Preheat oven to 350°F (175°C). In a large bowl, whisk together the pumpkin puree, sugar, vegetable oil, and eggs until smooth.
- Sift the flour, baking soda, cinnamon, nutmeg, and salt into the wet mixture. Gently fold with a spatula until no streaks of white flour remain.
- Gently stir in the diced fresh apples and pour the batter into a prepared 9x5 inch loaf pan, smoothing the top.
- In a small bowl, rub cold cubed butter into the flour, brown sugar, and cinnamon using fingertips until it resembles coarse sand. Sprinkle evenly over the batter.
- Bake for 60 to 70 minutes until a toothpick inserted into the center comes out clean and the top is deep mahogany-brown.
