Ingredients:

  • 1 cup (150g) frozen pineapple chunks
  • ½ cup (60g) peeled and chopped English cucumber
  • ½ cup (120ml) coconut water
  • ¼ cup (60g) Greek yogurt
  • ½ frozen banana (approx. 60g)
  • 1 tsp (5ml) fresh lime juice
  • ½ tsp (2.5g) freshly grated ginger
  • 1 leaf of fresh mint

Instructions:

  1. Roughly chop the cucumber into small discs. Note: Peel the skin if you want a completely smooth finish.
  2. Add the coconut water and Greek yogurt to the bottom of the blender. Note: This creates a liquid vortex to move the solids.
  3. Layer in the chopped cucumber, freshly grated ginger, and fresh lime juice.
  4. Top the mixture with the frozen pineapple chunks and the frozen banana.
  5. Blend on high for 45–60 seconds until the mixture is glossy and no fruit chunks remain.
  6. Check the consistency: if too thick, add coconut water 1 tbsp at a time.
  7. If too thin, add a few more frozen pineapple chunks and pulse until velvety.
  8. Pour into a glass and garnish with a fresh mint leaf.
