Ingredients:

  • 3 ripe bananas, mashed (approx. 340g)
  • 1/2 cup (115g) melted unsalted butter
  • 1/2 cup (100g) brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1/4 cup (60g) sour cream
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (2g) baking powder
  • 1/2 tsp (3g) salt
  • 1 tbsp (6g) ground cinnamon
  • 1 1/2 cups (160g) grated zucchini, squeezed dry

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large bowl, mash the bananas until smooth, then whisk in the melted butter, brown sugar, white sugar, egg, sour cream, and vanilla until the mixture is velvety and combined.
  3. Sift the flour, baking soda, baking powder, salt, and cinnamon directly into the wet mixture.
  4. Using a spatula, gently fold the ingredients together until no more streaks of dry flour are visible; do not over-mix.
  5. Stir in the squeezed dry grated zucchini and any optional add-ins like chopped walnuts or chocolate chips.
  6. Pour the batter into the prepared pan and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
