Ingredients:
- 3 ripe bananas, mashed (approx. 340g)
- 1/2 cup (115g) melted unsalted butter
- 1/2 cup (100g) brown sugar, packed
- 1/4 cup (50g) granulated sugar
- 1 large egg, room temperature
- 1/4 cup (60g) sour cream
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (2g) baking powder
- 1/2 tsp (3g) salt
- 1 tbsp (6g) ground cinnamon
- 1 1/2 cups (160g) grated zucchini, squeezed dry
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large bowl, mash the bananas until smooth, then whisk in the melted butter, brown sugar, white sugar, egg, sour cream, and vanilla until the mixture is velvety and combined.
- Sift the flour, baking soda, baking powder, salt, and cinnamon directly into the wet mixture.
- Using a spatula, gently fold the ingredients together until no more streaks of dry flour are visible; do not over-mix.
- Stir in the squeezed dry grated zucchini and any optional add-ins like chopped walnuts or chocolate chips.
- Pour the batter into the prepared pan and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
