Ingredients:
- 3 large over-ripe bananas, mashed (340g)
- 1/2 cup unsalted butter, melted and cooled (115g)
- 1/2 cup maple syrup (120ml)
- 1 large egg, room temperature (50g)
- 1 tsp pure vanilla extract (5ml)
- 1 1/2 cups rolled oats (180g)
- 1 cup all-purpose flour (125g)
- 1 tsp baking soda (5g)
- 1/2 tsp salt (3g)
- 1 tsp ground cinnamon (2g)
- 1/2 cup semi-sweet chocolate chips (85g)
- 1/2 cup chopped walnuts (60g)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment paper.
- In a large bowl, mash the bananas until smooth. Stir in the melted butter, maple syrup, egg, and vanilla until the mixture is emulsified and glossy.
- Sift the flour, baking soda, salt, and cinnamon directly into the wet ingredients.
- Add the rolled oats and gently fold with a spatula. Stop as soon as no streaks of dry flour remain to avoid over-mixing.
- Gently fold in the semi-sweet chocolate chips and chopped walnuts.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 60–70 minutes. The bread is done when a toothpick inserted into the center comes out clean or with just a few moist crumbs.
- Let the loaf cool in the pan for 10 minutes before transferring to a wire rack to set.
