Ingredients:
- 1 1/2 cups (180g) graham cracker crumbs
- 1/3 cup (75g) granulated sugar
- 6 tbsp (85g) unsalted butter, melted
- 16 oz (450g) full-fat brick cream cheese, softened to room temperature
- 1 cup (245g) pumpkin puree
- 3/4 cup (90g) powdered sugar
- 1 tbsp (8g) pumpkin pie spice
- 1 tsp (5ml) vanilla extract
- 1 cup (240ml) heavy whipping cream, cold
- 1/2 cup (120ml) heavy whipping cream, cold
- 1 tbsp (15ml) maple syrup
- 1/4 tsp (1g) ground cinnamon
Instructions:
- Combine graham cracker crumbs, granulated sugar, and melted butter in a bowl until the mixture resembles wet sand.
- Firmly press the crust mixture into the bottom of a 9-inch springform pan, ensuring edges are packed tight. Place in the freezer for 10 minutes to set.
- Beat the softened cream cheese and powdered sugar together until smooth and lump-free.
- Fold in the blotted pumpkin puree, pumpkin pie spice, and vanilla extract until the color is uniform.
- In a separate bowl, whip 1 cup of cold heavy cream to stiff peaks, then gently fold it into the pumpkin cream cheese mixture using a spatula.
- Pour the filling over the chilled crust, smooth the top with an offset spatula, cover with plastic wrap, and refrigerate for at least 6 hours or overnight.
- Whip the remaining 1/2 cup heavy cream, maple syrup, and a pinch of cinnamon together until fluffy. Pipe or dollop onto the chilled cheesecake just before serving.
