Ingredients:

  • 1 lb lean ground beef
  • 4 slices thick-cut bacon
  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 6 cups chopped romaine or green leaf lettuce
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1 large avocado, diced
  • 1/2 cup dill pickles, sliced
  • 1/2 cup avocado oil mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1 tsp mustard powder

Instructions:

  1. Fry the bacon in a skillet over medium heat until the fat has rendered and the edges are crispy. Remove the bacon to a paper towel-lined plate, keeping about 1 tbsp of the bacon fat in the pan.
  2. Increase heat to medium-high. Add the ground beef, salt, pepper, and garlic powder. Press the beef down with a spatula and leave undisturbed for 3-4 minutes until a deep brown crust forms. Break into chunks and cook until no longer pink.
  3. In a small bowl, whisk together the avocado oil mayonnaise, apple cider vinegar, smoked paprika, and mustard powder until smooth.
  4. Divide the chopped lettuce among four bowls. Arrange the tomatoes, sliced red onions, pickles, and diced avocado in sections on top of the greens.
  5. Spoon the hot, seared beef into the center of each bowl, top with crumbled bacon, and drizzle with the burger sauce.
