Ingredients:

  • 4 medium sweet potatoes, scrubbed and pricked
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1 lb lean ground beef (90/10)
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • black pepper, to taste
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup sour cream
  • 3 scallions, thinly sliced
  • 4 slices cooked bacon, crumbled

Instructions:

  1. Prick each sweet potato with a fork and microwave on high for 5–7 minutes to soften the center.
  2. Rub the potato skins with 2 tablespoons of olive oil and 1 teaspoon of kosher salt. Place on a baking sheet and roast at 425°F (220°C) for 15–20 minutes until the skin is blistered.
  3. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add lean ground beef, breaking it apart with a spatula.
  4. Season the beef with garlic powder, smoked paprika, salt, and black pepper. Sauté until browned and caramelized, about 7–9 minutes.
  5. Slice each baked potato down the center and fluff the interior with a fork.
  6. Spoon a generous portion of the savory beef into the center of each potato and top with shredded cheddar cheese.
  7. Return potatoes to the oven or under a broiler for 3–5 minutes until the cheese is bubbling and golden-brown.
  8. Top each potato with a dollop of sour cream, sliced scallions, and crumbled bacon.
