Ingredients:
- 4 medium sweet potatoes, scrubbed and pricked
- 2 tbsp olive oil
- 1 tsp kosher salt
- 1 lb lean ground beef (90/10)
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- black pepper, to taste
- 1 cup shredded sharp cheddar cheese
- 1/4 cup sour cream
- 3 scallions, thinly sliced
- 4 slices cooked bacon, crumbled
Instructions:
- Prick each sweet potato with a fork and microwave on high for 5–7 minutes to soften the center.
- Rub the potato skins with 2 tablespoons of olive oil and 1 teaspoon of kosher salt. Place on a baking sheet and roast at 425°F (220°C) for 15–20 minutes until the skin is blistered.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add lean ground beef, breaking it apart with a spatula.
- Season the beef with garlic powder, smoked paprika, salt, and black pepper. Sauté until browned and caramelized, about 7–9 minutes.
- Slice each baked potato down the center and fluff the interior with a fork.
- Spoon a generous portion of the savory beef into the center of each potato and top with shredded cheddar cheese.
- Return potatoes to the oven or under a broiler for 3–5 minutes until the cheese is bubbling and golden-brown.
- Top each potato with a dollop of sour cream, sliced scallions, and crumbled bacon.
