Ingredients:

  • 2 lbs sweet potatoes, peeled and cut into 1-inch chunks
  • 2 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 3 tbsp honey
  • 1/2 tsp ground cinnamon
  • 1 tsp lemon juice

Instructions:

  1. Preheat your oven to 425°F (218°C). Peel the sweet potatoes and cut them into uniform 1-inch chunks.
  2. In a large bowl, toss the sweet potato chunks with olive oil, salt, and pepper.
  3. Spread the potatoes in a single layer on a parchment-lined baking sheet and roast for 15–20 minutes until the edges soften and begin to turn golden.
  4. While the potatoes roast, whisk together the honey, cinnamon, and lemon juice in a small bowl.
  5. Remove the pan from the oven, drizzle the honey mixture over the potatoes, and toss gently with a spatula to coat.
  6. Return to the oven for another 5–10 minutes until the glaze is bubbling and the potatoes have a deep, mahogany-colored glow.
