Ingredients:
- 2 lbs sweet potatoes, peeled and cut into 1-inch chunks
- 2 tbsp extra virgin olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 3 tbsp honey
- 1/2 tsp ground cinnamon
- 1 tsp lemon juice
Instructions:
- Preheat your oven to 425°F (218°C). Peel the sweet potatoes and cut them into uniform 1-inch chunks.
- In a large bowl, toss the sweet potato chunks with olive oil, salt, and pepper.
- Spread the potatoes in a single layer on a parchment-lined baking sheet and roast for 15–20 minutes until the edges soften and begin to turn golden.
- While the potatoes roast, whisk together the honey, cinnamon, and lemon juice in a small bowl.
- Remove the pan from the oven, drizzle the honey mixture over the potatoes, and toss gently with a spatula to coat.
- Return to the oven for another 5–10 minutes until the glaze is bubbling and the potatoes have a deep, mahogany-colored glow.
