Ingredients:

  • 2 lbs mixed heirloom tomatoes
  • 1/2 cup red onion
  • 1 cup fresh basil leaves
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp flaky sea salt
  • 1/2 tsp freshly cracked black pepper
  • 8 oz fresh mozzarella pearls

Instructions:

  1. Slice the heirloom tomatoes into uniform wedges. Place them in a wide bowl and sprinkle with half of the flaky salt. Let them sit for 3 minutes to draw out natural juices.
  2. In a small jar or bowl, whisk together the olive oil, red wine vinegar, black pepper, and the remaining salt until the mixture is opaque and slightly thickened.
  3. Add the thinly sliced red onion to the tomatoes. Drizzle the dressing over the mixture and toss gently to avoid bruising the tomatoes.
  4. Fold in the hand-torn basil leaves at the last second to prevent oxidation.
  5. Transfer the salad to a platter, nestle the mozzarella pearls throughout, and finish with a final drizzle of olive oil.
