Ingredients:
- 180g oat flour
- 1 tsp baking powder
- 0.5 tsp baking soda
- 0.25 tsp sea salt
- 0.5 tsp ground cinnamon
- 120ml raw honey
- 125g Greek yogurt
- 1 large egg
- 1 tsp vanilla bean paste
- 2 tbsp melted coconut oil
Instructions:
- Preheat your oven to 350°F (180°C) and lightly grease a 24-count mini muffin tin with coconut oil.
- In a separate bowl, whisk together the egg, honey, and Greek yogurt vigorously until the mixture achieves a smooth and glossy consistency.
- In a separate bowl, whisk together the oat flour, baking powder, baking soda, sea salt, and cinnamon.
- Pour the wet ingredients into the dry ingredients. Use a spatula to fold them together just until combined. Don't overmix, or the bites will become tough and gummy.
- Fill each mini muffin cavity approximately 3/4 full with the batter.
- Bake for 12 minutes or until the tops spring back when lightly touched. Transfer to a wire rack to cool.
