Ingredients:

  • 180g oat flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp sea salt
  • 0.5 tsp ground cinnamon
  • 120ml raw honey
  • 125g Greek yogurt
  • 1 large egg
  • 1 tsp vanilla bean paste
  • 2 tbsp melted coconut oil

Instructions:

  1. Preheat your oven to 350°F (180°C) and lightly grease a 24-count mini muffin tin with coconut oil.
  2. In a separate bowl, whisk together the egg, honey, and Greek yogurt vigorously until the mixture achieves a smooth and glossy consistency.
  3. In a separate bowl, whisk together the oat flour, baking powder, baking soda, sea salt, and cinnamon.
  4. Pour the wet ingredients into the dry ingredients. Use a spatula to fold them together just until combined. Don't overmix, or the bites will become tough and gummy.
  5. Fill each mini muffin cavity approximately 3/4 full with the batter.
  6. Bake for 12 minutes or until the tops spring back when lightly touched. Transfer to a wire rack to cool.
