Ingredients:

  • 2 slices Sprouted grain bread
  • 1 tsp extra virgin olive oil
  • 1/2 cup low-fat cottage cheese
  • 1/2 tsp lemon zest
  • 1 pinch flaky sea salt
  • 1 large soft-boiled egg
  • 2 thinly sliced radishes
  • 1 tsp everything bagel seasoning

Instructions:

  1. Place 2 slices Sprouted grain bread in the toaster.
  2. Toast until deeply golden and firm to the touch.
  3. While the bread toasts, bring a small pot of water to a boil.
  4. Lower 1 large soft boiled egg into the water carefully.
  5. Boil for 6 minutes until the white is opaque and firm.
  6. Immediately move the egg to a bowl of ice water for 2 minutes.
  7. Brush 1 tsp extra virgin olive oil over the warm toast slices.
  8. Spread 1/2 cup low-fat cottage cheese evenly across both slices.
  9. Sprinkle 1/2 tsp lemon zest and 1 pinch flaky sea salt over the cheese.
  10. Peel and halve the egg, then place on top of the cheese.
  11. Add 2 thinly sliced radishes and 1 tsp everything bagel seasoning.
