Ingredients:

  • 3 large overripe bananas, mashed (340g)
  • 1/2 cup plain Greek yogurt (120g)
  • 2 large eggs (100g)
  • 1/3 cup pure maple syrup (80ml)
  • 1 tsp pure vanilla extract (5ml)
  • 1 1/2 cups oat flour (180g)
  • 1 tsp baking soda (5g)
  • 1/2 tsp sea salt (3g)
  • 1 tsp ground cinnamon (2g)
  • 1/2 cup chopped walnuts (60g)
  • 1/2 cup dark chocolate chips (75g)

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment paper.
  2. In a large bowl, mash the bananas with a fork until smooth.
  3. Whisk in the Greek yogurt, eggs, maple syrup, and vanilla extract until the mixture is velvety and fully emulsified.
  4. Sift the oat flour, baking soda, salt, and cinnamon directly into the wet mixture.
  5. Gently fold the ingredients together with a spatula until no streaks of flour remain, then fold in walnuts and chocolate chips.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack.
