Ingredients:
- 3 large overripe bananas, mashed (340g)
- 1/2 cup plain Greek yogurt (120g)
- 2 large eggs (100g)
- 1/3 cup pure maple syrup (80ml)
- 1 tsp pure vanilla extract (5ml)
- 1 1/2 cups oat flour (180g)
- 1 tsp baking soda (5g)
- 1/2 tsp sea salt (3g)
- 1 tsp ground cinnamon (2g)
- 1/2 cup chopped walnuts (60g)
- 1/2 cup dark chocolate chips (75g)
Instructions:
- Preheat the oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment paper.
- In a large bowl, mash the bananas with a fork until smooth.
- Whisk in the Greek yogurt, eggs, maple syrup, and vanilla extract until the mixture is velvety and fully emulsified.
- Sift the oat flour, baking soda, salt, and cinnamon directly into the wet mixture.
- Gently fold the ingredients together with a spatula until no streaks of flour remain, then fold in walnuts and chocolate chips.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack.
