Ingredients:

  • 4 medium Honeycrisp or Granny Smith apples (approx. 800g)
  • 1/2 cup water or unsweetened apple cider
  • 1/2 cup rolled oats
  • 2 tbsp ground cinnamon
  • 2 tbsp maple syrup or liquid monk fruit sweetener
  • 2 tbsp chopped walnuts or pecans
  • 1 tbsp melted coconut oil or butter

Instructions:

  1. Using a corer or knife, remove the center seeds and core of the apples, creating a well about 1 inch deep, stopping before hitting the bottom.
  2. Place the apples upright in a 9x9 inch baking dish.
  3. Pour the water or apple cider into the bottom of the dish around the apples.
  4. In a small bowl, stir together the rolled oats, cinnamon, and chopped nuts.
  5. Fold in the melted coconut oil and maple syrup (or monk fruit sweetener) until the mixture resembles damp sand.
  6. Spoon the filling generously into the center of each apple, pressing down slightly with a spoon.
  7. Preheat the oven to 350°F (175°C).
  8. Place the dish on the center rack and bake for 45–60 minutes.
  9. Check for doneness: apples are ready when the skin slightly wrinkles and a knife slides into the side with zero resistance.
  10. Remove from the oven and let sit for 5 minutes, then spoon the syrupy liquid from the bottom of the pan over the tops before serving.
