Ingredients:

  • 1.5 cups (190g) whole wheat pastry flour
  • 0.5 cup (45g) rolled oats
  • 1 tsp (5g) baking powder
  • 0.5 tsp (3g) baking soda
  • 1.5 tsp (4g) ground cinnamon
  • 0.25 tsp (1.5g) fine sea salt
  • 0.5 cup (120g) plain Greek yogurt
  • 0.33 cup (80ml) pure maple syrup
  • 1 large (50g) egg
  • 1 tsp (5ml) vanilla extract
  • 1 cup (140g) apple, peeled and grated

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a 12-cup standard muffin tin with paper liners or silicone cups.
  2. In a medium bowl, whisk together the whole wheat pastry flour, rolled oats, baking powder, baking soda, cinnamon, and salt until no clumps remain.
  3. In a large bowl, whisk the egg and maple syrup together until smooth.
  4. Stir the plain Greek yogurt and vanilla extract into the egg mixture until velvety and well-combined.
  5. Fold the grated apple into the wet mixture, ensuring the fruit is evenly distributed.
  6. Pour the dry ingredients into the wet ingredients and gently fold with a spatula until just combined; the batter should remain slightly lumpy.
  7. Divide the batter evenly among the 12 muffin cups.
  8. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack.
