Ingredients:
- 3 cups all-purpose flour
- 1/2 cup whole wheat pastry flour
- 2 1/4 tsp active dry yeast
- 1 cup warm milk
- 1/4 cup honey
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1/2 tsp salt
- 2 medium Granny Smith apples, finely diced
- 2 tbsp unsalted butter
- 1 tbsp maple syrup
- 1 tbsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tbsp lemon juice
- 1/4 cup plain Greek yogurt
- 2 tbsp maple syrup
- 1/2 tsp vanilla extract
- 3 tbsp milk
Instructions:
- Combine warm milk and honey in a mixer bowl, sprinkle yeast on top, and let sit for 5-10 minutes until foamy.
- Add softened butter, egg, salt, all-purpose flour, and whole wheat pastry flour to the bowl. Mix on low until a shaggy dough forms.
- Knead the dough on medium-low speed for 5-7 minutes until smooth, elastic, and clearing the sides of the bowl.
- Place dough in a greased bowl, cover with a damp cloth, and let rise in a warm spot for 60-90 minutes until doubled in size.
- Melt 2 tbsp butter in a skillet over medium heat. Add diced apples and lemon juice.
- Stir in cinnamon, nutmeg, and maple syrup. Cook for 5-7 minutes until apples are tender and liquid has reduced to a thick glaze. Let cool completely.
- On a floured surface, roll the dough into a rectangle, spread the cooled apple filling evenly, roll into a log, and cut into 12 equal rolls.
- Place rolls in a 9x13 inch non-stick baking pan and bake for 25-30 minutes until golden brown.
- Whisk together Greek yogurt, maple syrup, vanilla extract, and milk. Drizzle the glaze over the rolls while still warm.
