Ingredients:
- 800ml full-fat coconut milk
- 120ml maple syrup
- 5ml vanilla extract
- 1.25g sea salt
- 15g matcha powder
- 30ml warm water
Instructions:
- Sift the matcha powder through a fine-mesh sieve into a small bowl and whisk in the warm water until a smooth, thick paste forms.
- Pour the coconut milk, maple syrup, vanilla extract, and sea salt into a blender and blend on medium speed for 30 seconds until emulsified.
- Add the matcha paste to the blender and blend for another 15 seconds until the mixture is a uniform green color.
- Pour the mixture into popsicle molds, leaving 0.6cm of space at the top for expansion. Insert sticks and freeze for at least 6 hours or overnight.
