Ingredients:

  • 800ml full-fat coconut milk
  • 120ml maple syrup
  • 5ml vanilla extract
  • 1.25g sea salt
  • 15g matcha powder
  • 30ml warm water

Instructions:

  1. Sift the matcha powder through a fine-mesh sieve into a small bowl and whisk in the warm water until a smooth, thick paste forms.
  2. Pour the coconut milk, maple syrup, vanilla extract, and sea salt into a blender and blend on medium speed for 30 seconds until emulsified.
  3. Add the matcha paste to the blender and blend for another 15 seconds until the mixture is a uniform green color.
  4. Pour the mixture into popsicle molds, leaving 0.6cm of space at the top for expansion. Insert sticks and freeze for at least 6 hours or overnight.
