- 1 tsp ground cinnamon (2g)
- 1/4 tsp fine sea salt (1.5g)
- 1/4 cup milk of choice (60ml)
Instructions:
- In a medium bowl, use a fork to mash the bananas until they reach a smooth consistency with minimal lumps.
- Whisk in the egg, maple syrup, vanilla, and melted butter until the mixture is cohesive and glossy.
- In a separate large bowl, whisk together the gluten-free flour, baking powder, cinnamon, and salt to remove any clumps.
- Pour the wet ingredients into the dry. Slowly stir in the milk. Fold gently until just combined; avoid over-mixing to keep the pancakes airy.
- Preheat your skillet over medium-low heat and lightly grease with butter or oil.
- Scoop approximately 1/4 cup of batter per pancake onto the hot surface.
- Cook for 2-3 minutes until bubbles form on the surface and the edges look set and matte.
- Carefully flip the pancake in one quick motion and cook for another 2 minutes until both sides are golden-brown.
