Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 1 cup (200g) brown sugar, packed
- 1 large egg
- 1/4 cup (60ml) milk
- 2 cups (250g) all-purpose flour
- 1 teaspoon (2.5g) ground cinnamon
- 1/2 teaspoon (3g) salt
- 1 teaspoon (5g) baking soda
- 1 cup (150g) peeled and finely diced apple
- 1 cup (120g) powdered sugar
- 2 tablespoons (30ml) milk or heavy cream
- 1/2 teaspoon (2.5ml) vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
- Beat in the egg and milk until the mixture is smooth.
- Whisk together flour, cinnamon, salt, and baking soda in a separate bowl, then gradually stir into the wet ingredients until just combined.
- Gently fold in the finely diced apples using a spatula to avoid overworking the dough.
- Scoop rounded tablespoons of dough onto the prepared sheets, spacing them 2 inches apart.
- Bake for 12–15 minutes until the edges are set and the tops look matte, but still feel soft to the touch.
- Allow cookies to cool on the pan for 5 minutes before transferring to a wire rack.
- Whisk together powdered sugar, milk, and vanilla until smooth, then glaze the cookies while slightly warm.
