Ingredients:
- 2 lbs mixed heirloom tomatoes, sliced into thick wedges
- 50g red onion, thinly shaved into half-moons
- 1/4 cup fresh basil leaves, torn by hand
- 2 tbsp fresh flat-leaf parsley, chopped
- 3 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- 1 clove garlic, minced finely
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 8 oz fresh mozzarella pearls
Instructions:
- Place the sliced heirloom tomatoes in a colander over the sink. Sprinkle with a pinch of sea salt and let them sit for 5–10 minutes to drain excess moisture.
- In a small bowl, whisk together the olive oil, vinegar, minced garlic, salt, and pepper until the dressing is fully combined and opaque.
- On a large platter, scatter the drained tomatoes and shaved red onions.
- Drizzle the dressing evenly over the tomatoes and onions, then gently nestle the mozzarella into the gaps.
- Finish by scattering torn basil and parsley over the top.
