Ingredients:

  • 2 lbs mixed heirloom tomatoes, sliced into thick wedges
  • 50g red onion, thinly shaved into half-moons
  • 1/4 cup fresh basil leaves, torn by hand
  • 2 tbsp fresh flat-leaf parsley, chopped
  • 3 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 clove garlic, minced finely
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 8 oz fresh mozzarella pearls

Instructions:

  1. Place the sliced heirloom tomatoes in a colander over the sink. Sprinkle with a pinch of sea salt and let them sit for 5–10 minutes to drain excess moisture.
  2. In a small bowl, whisk together the olive oil, vinegar, minced garlic, salt, and pepper until the dressing is fully combined and opaque.
  3. On a large platter, scatter the drained tomatoes and shaved red onions.
  4. Drizzle the dressing evenly over the tomatoes and onions, then gently nestle the mozzarella into the gaps.
  5. Finish by scattering torn basil and parsley over the top.
