Ingredients:

  • 3 large ripe bananas (approx. 300g), peeled and sliced
  • 2 tbsp honey (30g)
  • 1/2 cup creamy peanut butter (125g)
  • 1 tbsp melted coconut oil (15ml)
  • 3/4 cup dark chocolate chips (130g)
  • 1 tsp coconut oil (5ml)

Instructions:

  1. Mash the bananas in a mixing bowl until completely smooth with no lumps. Stir in the honey. Line a baking sheet with parchment paper and spread the banana mixture into a flat, even layer about 1/4 inch thick.
  2. In a microwave-safe bowl, heat the peanut butter and 1 tablespoon of coconut oil for 20–30 seconds until fluid. Drizzle the mixture over the banana base and spread to the edges using a spatula.
  3. Melt the dark chocolate chips and 1 teaspoon of coconut oil in 30-second bursts in the microwave, stirring in between until glossy. Pour the chocolate over the nut butter layer, smooth it out, and immediately place the tray in the freezer.
  4. Once the bark is fully solidified (approximately 3 hours), lift the parchment paper off the tray and snap the bark into irregular, bite-sized shards.
