Ingredients:
- 6 cups seedless watermelon, cubed and chilled
- 1 cup frozen watermelon cubes
- 1 tbsp fresh lime juice
- 8 fresh mint leaves, packed
- 1g sea salt
Instructions:
- Slice chilled watermelon in half and scoop out the flesh or cut into 1-inch cubes, removing any large black seeds. For best results, ensure cubes have been refrigerated for at least 2 hours.
- Combine the fresh watermelon cubes, frozen watermelon cubes, lime juice, and fresh mint leaves in a high-speed blender carafe.
- Blend on low speed to break up chunks, then increase to high for 45–60 seconds until the mixture is velvety and mint is finely speckled.
- Taste the juice and add a splash of cold water if it is too thick. For a clear consistency, pour the mixture through a fine mesh strainer into a pitcher, pressing with a spoon to extract all juice.
