Ingredients:

  • 6 cups seedless watermelon, cubed and chilled
  • 1 cup frozen watermelon cubes
  • 1 tbsp fresh lime juice
  • 8 fresh mint leaves, packed
  • 1g sea salt

Instructions:

  1. Slice chilled watermelon in half and scoop out the flesh or cut into 1-inch cubes, removing any large black seeds. For best results, ensure cubes have been refrigerated for at least 2 hours.
  2. Combine the fresh watermelon cubes, frozen watermelon cubes, lime juice, and fresh mint leaves in a high-speed blender carafe.
  3. Blend on low speed to break up chunks, then increase to high for 45–60 seconds until the mixture is velvety and mint is finely speckled.
  4. Taste the juice and add a splash of cold water if it is too thick. For a clear consistency, pour the mixture through a fine mesh strainer into a pitcher, pressing with a spoon to extract all juice.
