Instructions:

  1. Cut the heirloom tomatoes into uniform wedges and slice the red onion into translucent half-moons.
  2. Combine the olive oil, white balsamic vinegar, salt, and pepper in a small jar and shake vigorously or whisk until the mixture is cohesive and velvety.
  3. Stir the minced basil, parsley, and mint into the dressing.
  4. Place the tomatoes, onions, and cucumbers in a large mixing bowl.
  5. Drizzle the herb dressing over the vegetables and use a gentle folding motion to coat the produce without crushing the tomato flesh.
  6. Let the salad sit for 5 minutes at room temperature to allow the salt to draw out the natural juices before serving.
