Ingredients:

  • 2 lbs Mixed Heirloom Tomatoes
  • 1/2 tsp Flaky Sea Salt
  • 3 tbsp Extra Virgin Olive Oil
  • 2 tbsp Balsamic Vinegar
  • 1 tsp Honey
  • 1 small clove Garlic, minced
  • 1/4 tsp Cracked Black Pepper
  • 8 oz Fresh Mozzarella Pearls
  • 1/2 cup Fresh Basil Leaves
  • 1 tbsp Balsamic Glaze

Instructions:

  1. Place sliced heirloom tomatoes in a colander over the sink. Sprinkle with the flaky sea salt and let them sit for 5–10 minutes to remove excess moisture.
  2. In a small jar, combine the olive oil, balsamic vinegar, honey, minced garlic, and black pepper. Shake vigorously until the mixture is emulsified, opaque, and thickened.
  3. Transfer the drained tomatoes to a platter. Scatter the mozzarella pearls over the tomatoes.
  4. Drizzle the balsamic vinaigrette evenly over the top. Finish by scattering torn basil leaves and an optional drizzle of balsamic glaze.
