Ingredients:
- 24 Golden Oreo cookies
- 5 tbsp unsalted butter, melted
- 1/4 tsp sea salt
- 24 oz full-fat cream cheese, room temperature
- 1 cup powdered sugar, sifted
- 1 cup heavy whipping cream, cold
- 1 tsp pure vanilla paste
- 1/4 cup strawberry preserves
- 12 Golden Oreo cookies, for topping
- 1 oz freeze-dried strawberries
- 2 tbsp unsalted butter, melted, for topping
Instructions:
- Pulverize 24 Golden Oreos in a food processor until they resemble fine sand.
- Combine cookie crumbs with 5 tablespoons of melted butter and sea salt.
- Press the mixture firmly into the bottom of a parchment-lined 9-inch springform pan to create the foundation.
- In a large bowl, beat the room temperature cream cheese and powdered sugar until smooth and aerated.
- In a separate chilled bowl, whip the heavy cream and vanilla paste to stiff peaks.
- Gently fold the whipped cream into the cream cheese mixture, then marble in the strawberry preserves.
- Spread the filling over the crust and smooth the top with an offset spatula. Chill for at least 6 hours.
- Prepare the topping by crushing 12 Golden Oreos into coarse chunks and mixing with pulverized freeze-dried strawberries and 2 tablespoons of melted butter.
- Press the strawberry crunch mixture onto the top of the chilled cheesecake before serving.
