Ingredients:

  • 24 Golden Oreo cookies
  • 5 tbsp unsalted butter, melted
  • 1/4 tsp sea salt
  • 24 oz full-fat cream cheese, room temperature
  • 1 cup powdered sugar, sifted
  • 1 cup heavy whipping cream, cold
  • 1 tsp pure vanilla paste
  • 1/4 cup strawberry preserves
  • 12 Golden Oreo cookies, for topping
  • 1 oz freeze-dried strawberries
  • 2 tbsp unsalted butter, melted, for topping

Instructions:

  1. Pulverize 24 Golden Oreos in a food processor until they resemble fine sand.
  2. Combine cookie crumbs with 5 tablespoons of melted butter and sea salt.
  3. Press the mixture firmly into the bottom of a parchment-lined 9-inch springform pan to create the foundation.
  4. In a large bowl, beat the room temperature cream cheese and powdered sugar until smooth and aerated.
  5. In a separate chilled bowl, whip the heavy cream and vanilla paste to stiff peaks.
  6. Gently fold the whipped cream into the cream cheese mixture, then marble in the strawberry preserves.
  7. Spread the filling over the crust and smooth the top with an offset spatula. Chill for at least 6 hours.
  8. Prepare the topping by crushing 12 Golden Oreos into coarse chunks and mixing with pulverized freeze-dried strawberries and 2 tablespoons of melted butter.
  9. Press the strawberry crunch mixture onto the top of the chilled cheesecake before serving.
