Ingredients:
- 1.5 cups (180g) gingersnap cookie crumbs
- 4 tbsp (56g) unsalted butter, melted
- 1 tbsp (12g) brown sugar
- 16 oz (450g) cream cheese, softened
- 0.5 cup (60g) maple syrup
- 1 cup (245g) pumpkin puree
- 2 large eggs
- 1 tsp (5g) vanilla extract
- 1.5 tsp (3g) ground cinnamon
- 0.5 tsp (1g) ground ginger
- 0.25 tsp (0.5g) ground cloves
- 0.25 tsp (1.5g) salt
Instructions:
- Preheat your oven to 325°F (160°C).
- Combine gingersnap crumbs, melted butter, and brown sugar in a bowl until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of a 9-inch springform pan.
- Bake for 8-10 minutes until fragrant and edges are golden; let cool.
- Beat softened cream cheese and maple syrup on medium speed until smooth and airy.
- Mix in pumpkin puree, cinnamon, ginger, cloves, and salt until the color is uniform.
- Add eggs one at a time on low speed, mixing just until incorporated to avoid over-aerating.
- Stir in vanilla extract by hand.
- Pour the filling over the pre-baked crust and smooth the top with a spatula.
- Bake for 35-40 minutes until edges are set but the center still has a slight jiggle.
- Turn off the oven and crack the door open slightly, cooling the cheesecake inside for 30 minutes.
- Remove from oven and refrigerate for at least 6 hours or overnight to firm up.
