Ingredients:
- 2 lbs mixed heirloom tomatoes
- 1/2 small red onion
- 1/4 cup fresh basil leaves
- 3 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- 1 clove garlic
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions:
- Slice the heirloom tomatoes into uniform wedges or thick rounds and place them in a large mixing bowl along with the thinly sliced red onions.
- In a small jar, combine the olive oil, balsamic vinegar, minced garlic, salt, and pepper. Shake vigorously or whisk until the mixture is emulsified and thickened.
- Drizzle the dressing over the tomatoes and onions, gently folding the ingredients together with a spatula to avoid bruising the tomatoes.
- Scatter the torn basil leaves over the top just before serving.
