Ingredients:

  • 2 lbs mixed heirloom tomatoes
  • 1/2 small red onion
  • 1/4 cup fresh basil leaves
  • 3 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 clove garlic
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Instructions:

  1. Slice the heirloom tomatoes into uniform wedges or thick rounds and place them in a large mixing bowl along with the thinly sliced red onions.
  2. In a small jar, combine the olive oil, balsamic vinegar, minced garlic, salt, and pepper. Shake vigorously or whisk until the mixture is emulsified and thickened.
  3. Drizzle the dressing over the tomatoes and onions, gently folding the ingredients together with a spatula to avoid bruising the tomatoes.
  4. Scatter the torn basil leaves over the top just before serving.
