Ingredients:

  • 3 large overripe bananas, mashed (345g)
  • 1/2 cup unsalted butter, melted (115g)
  • 3/4 cup granulated sugar (150g)
  • 1 large egg
  • 1 tsp pure vanilla extract (5ml)
  • 2 cups all-purpose flour (250g)
  • 1 tsp baking soda (5g)
  • 1/2 tsp salt (3g)
  • 8 oz full-fat cream cheese, softened (225g)
  • 1/4 cup unsalted butter, softened (55g)
  • 2 cups powdered sugar, sifted (240g)
  • 1 tsp vanilla extract (5ml)
  • 2 tbsp heavy cream (30ml)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease your 9x13 pan with butter or line it with parchment paper.
  2. In a medium bowl, combine flour, baking soda, and salt. Set aside.
  3. In a large bowl, stir together melted butter and sugar. Beat in the egg and vanilla until smooth.
  4. Stir in the mashed bananas until fully incorporated.
  5. Gently fold the dry ingredients into the wet mixture using a spatula. Stop the moment no flour streaks remain; do not overmix.
  6. Pour the batter into the prepared pan and smooth the top. Bake for 35–40 minutes until the edges are golden brown and a toothpick inserted into the center comes out clean.
  7. Let the cake cool completely on a rack.
  8. Beat the softened cream cheese and butter until pale and fluffy.
  9. Gradually add powdered sugar and vanilla, beating until velvety. Add heavy cream if needed for consistency.
  10. Spread the frosting evenly across the cooled cake using an offset spatula.
