Ingredients:
- 3 large overripe bananas, mashed (345g)
- 1/2 cup unsalted butter, melted (115g)
- 3/4 cup granulated sugar (150g)
- 1 large egg
- 1 tsp pure vanilla extract (5ml)
- 2 cups all-purpose flour (250g)
- 1 tsp baking soda (5g)
- 1/2 tsp salt (3g)
- 8 oz full-fat cream cheese, softened (225g)
- 1/4 cup unsalted butter, softened (55g)
- 2 cups powdered sugar, sifted (240g)
- 1 tsp vanilla extract (5ml)
- 2 tbsp heavy cream (30ml)
Instructions:
- Preheat your oven to 350°F (175°C). Grease your 9x13 pan with butter or line it with parchment paper.
- In a medium bowl, combine flour, baking soda, and salt. Set aside.
- In a large bowl, stir together melted butter and sugar. Beat in the egg and vanilla until smooth.
- Stir in the mashed bananas until fully incorporated.
- Gently fold the dry ingredients into the wet mixture using a spatula. Stop the moment no flour streaks remain; do not overmix.
- Pour the batter into the prepared pan and smooth the top. Bake for 35–40 minutes until the edges are golden brown and a toothpick inserted into the center comes out clean.
- Let the cake cool completely on a rack.
- Beat the softened cream cheese and butter until pale and fluffy.
- Gradually add powdered sugar and vanilla, beating until velvety. Add heavy cream if needed for consistency.
- Spread the frosting evenly across the cooled cake using an offset spatula.
