Ingredients:
- 2 medium sweet potatoes, approx. 10 oz (280g) each
- 1 tbsp avocado oil
- 1/2 tsp kosher salt
Instructions:
- Scrub the sweet potatoes under cold water and pat them completely dry with paper towels.
- Use a fork to prick each potato 5–6 times across all sides to allow steam to escape.
- Rub the exterior of the potatoes with avocado oil and sprinkle evenly with kosher salt.
- Place the potatoes in the air fryer basket, ensuring they are not touching to allow air to flow freely.
- Set the temperature to 400°F (200°C) and cook for 40–45 minutes, flipping the potatoes halfway through.
- Check for doneness by inserting a knife into the center; it should slide in with zero resistance, and the skin should look slightly shriveled and smell toasted.
- Remove from the fryer and let them rest for 5 minutes to allow internal steam to redistribute.
