Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large (50g) egg, room temperature
  • 1/2 cup (120g) pumpkin puree
  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1 tsp (2g) ground cinnamon
  • 1/2 tsp (1g) ground nutmeg
  • 1/2 tsp (1g) ground cloves
  • 1/2 tsp (3g) salt
  • 8 oz (225g) full-fat cream cheese, softened
  • 1/4 cup (55g) unsalted butter, softened
  • 3 cups (360g) powdered sugar
  • 1 tsp (5ml) vanilla extract
  • 2 tbsp (30ml) heavy cream

Instructions:

  1. In a large bowl, beat the softened butter and granulated sugar on medium-high speed until the mixture is pale and fluffy.
  2. Add the egg and pumpkin puree. Beat on medium speed until fully combined and smooth.
  3. In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt. Gradually add the dry ingredients to the wet mixture, mixing on low speed just until no streaks of flour remain.
  4. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  5. Use a cookie scoop to portion dough onto the baking sheets.
  6. Bake for 10 minutes or until set. Allow cookies to cool completely on a wire rack before frosting.
  7. To make frosting, beat softened cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract. Stir in heavy cream if needed for consistency.
  8. Frost the cooled cookies and serve.
