Ingredients:

  • 6 cups seedless watermelon, cubed and chilled
  • 1 tbsp fresh lime juice
  • 6 fresh mint leaves, torn
  • 1/2 cup coconut water
  • 1 tsp grated fresh ginger
  • 4 small watermelon wedges
  • 4 fresh mint sprigs
  • 1 lime, sliced into wheels

Instructions:

  1. Ensure watermelon cubes have been refrigerated for at least 2 hours, then place them into the blender.
  2. Add the fresh lime juice, torn mint leaves, coconut water, and grated fresh ginger to the blender.
  3. Pulse the blender 5-7 times, then blend on medium speed for 30-45 seconds until the mixture is uniform.
  4. Pour the blended mixture through a fine-mesh strainer into a large glass pitcher.
  5. Use a spoon to press the pulp firmly against the strainer to extract all concentrated juice.
  6. Garnish each glass with a watermelon wedge, a mint sprig, and a lime wheel before serving.
