Ingredients:
- 6 cups seedless watermelon, cubed and chilled
- 1 tbsp fresh lime juice
- 6 fresh mint leaves, torn
- 1/2 cup coconut water
- 1 tsp grated fresh ginger
- 4 small watermelon wedges
- 4 fresh mint sprigs
- 1 lime, sliced into wheels
Instructions:
- Ensure watermelon cubes have been refrigerated for at least 2 hours, then place them into the blender.
- Add the fresh lime juice, torn mint leaves, coconut water, and grated fresh ginger to the blender.
- Pulse the blender 5-7 times, then blend on medium speed for 30-45 seconds until the mixture is uniform.
- Pour the blended mixture through a fine-mesh strainer into a large glass pitcher.
- Use a spoon to press the pulp firmly against the strainer to extract all concentrated juice.
- Garnish each glass with a watermelon wedge, a mint sprig, and a lime wheel before serving.
