Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (165g) brown sugar, packed
- 1/3 cup (80g) pumpkin puree
- 1 large egg yolk
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 1/2 tsp (4g) pumpkin pie spice
- 1/2 tsp (3g) salt
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Beat the softened butter and brown sugar together using an electric hand mixer until the mixture looks pale and fluffy.
- Stir in the pumpkin puree, egg yolk, and vanilla extract until the batter is velvety and smooth.
- Sift together the flour, baking soda, pumpkin spice, and salt.
- Gradually mix the dry ingredients into the wet base on low speed, stopping the moment no white streaks of flour remain.
- Fold in the semi-sweet chocolate chips by hand.
- Scoop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
- Bake at 350°F (175°C) for 10–12 minutes until the edges are just set and the center looks slightly underbaked.
