Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (165g) brown sugar, packed
  • 1/3 cup (80g) pumpkin puree
  • 1 large egg yolk
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1 1/2 tsp (4g) pumpkin pie spice
  • 1/2 tsp (3g) salt
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Beat the softened butter and brown sugar together using an electric hand mixer until the mixture looks pale and fluffy.
  2. Stir in the pumpkin puree, egg yolk, and vanilla extract until the batter is velvety and smooth.
  3. Sift together the flour, baking soda, pumpkin spice, and salt.
  4. Gradually mix the dry ingredients into the wet base on low speed, stopping the moment no white streaks of flour remain.
  5. Fold in the semi-sweet chocolate chips by hand.
  6. Scoop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  7. Bake at 350°F (175°C) for 10–12 minutes until the edges are just set and the center looks slightly underbaked.
