Ingredients:

  • 3 lbs sweet potatoes, peeled and sliced into 1-inch rounds
  • 4 tbsp unsalted butter, melted
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp brown sugar

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Slice the sweet potatoes into uniform 1-inch rounds to ensure consistent cooking.
  3. In a large mixing bowl, combine the melted butter, kosher salt, black pepper, and brown sugar.
  4. Add the sweet potato slices to the bowl and toss gently until every slice is evenly coated in the butter glaze.
  5. Arrange the slices in a single layer on the prepared baking sheet, ensuring the pieces do not touch to prevent steaming.
  6. Roast for 30–35 minutes, flipping the potatoes halfway through, until the edges are deeply caramelized and the centers are tender.
