Instructions:
- Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- Slice the sweet potatoes into uniform 1-inch rounds to ensure consistent cooking.
- In a large mixing bowl, combine the melted butter, kosher salt, black pepper, and brown sugar.
- Add the sweet potato slices to the bowl and toss gently until every slice is evenly coated in the butter glaze.
- Arrange the slices in a single layer on the prepared baking sheet, ensuring the pieces do not touch to prevent steaming.
- Roast for 30–35 minutes, flipping the potatoes halfway through, until the edges are deeply caramelized and the centers are tender.
