Ingredients:
- 1.5 lbs heirloom tomatoes
- 1 cup sweet mini bell peppers
- 1/4 cup red onion
- 1/4 cup fresh basil leaves
- 3 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- 1 tsp freshly cracked black pepper
- 1/2 tsp kosher salt
- 1 clove garlic
Instructions:
- Slice the heirloom tomatoes into irregular wedges, the mini bell peppers into thin rings, and the red onion into translucent slivers. Place all prepared vegetables into a large mixing bowl.
- In a small separate bowl, whisk together the extra virgin olive oil, red wine vinegar, and finely minced garlic until the mixture is emulsified and opaque.
- Drizzle the emulsion over the vegetables and toss gently with a spoon to coat.
- Sprinkle the kosher salt and freshly cracked black pepper over the top of the salad.
- Tear the fresh basil leaves by hand and fold them gently into the salad to avoid bruising.
