Ingredients:

  • 1.5 lbs heirloom tomatoes
  • 1 cup sweet mini bell peppers
  • 1/4 cup red onion
  • 1/4 cup fresh basil leaves
  • 3 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp freshly cracked black pepper
  • 1/2 tsp kosher salt
  • 1 clove garlic

Instructions:

  1. Slice the heirloom tomatoes into irregular wedges, the mini bell peppers into thin rings, and the red onion into translucent slivers. Place all prepared vegetables into a large mixing bowl.
  2. In a small separate bowl, whisk together the extra virgin olive oil, red wine vinegar, and finely minced garlic until the mixture is emulsified and opaque.
  3. Drizzle the emulsion over the vegetables and toss gently with a spoon to coat.
  4. Sprinkle the kosher salt and freshly cracked black pepper over the top of the salad.
  5. Tear the fresh basil leaves by hand and fold them gently into the salad to avoid bruising.
