Ingredients:

  • 1 cup (225g) low-fat cottage cheese
  • 1 cup (125g) self-rising flour
  • 0.5 tsp kosher salt
  • 1 large egg
  • 2 tbsp everything bagel seasoning

Instructions:

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Add the cottage cheese to a food processor and pulse until completely smooth and velvety. Note: It should look like thick yogurt.
  3. In a large bowl, whisk the self rising flour and kosher salt together.
  4. Pour the pureed cottage cheese into the flour mixture.
  5. Use a spatula to fold the ingredients until a shaggy dough forms.
  6. Turn the dough onto a floured surface and knead 4–5 times until cohesive and tacky.
  7. Divide the dough into 4 equal portions and roll them into 6 inch ropes.
  8. Join the ends of each rope to form a circle, pinching firmly to seal.
  9. Brush the tops with the beaten egg and sprinkle heavily with everything seasoning.
  10. Bake for 25 minutes until golden brown and firm.
