Ingredients:
- 1 cup (225g) low-fat cottage cheese
- 1 cup (125g) self-rising flour
- 0.5 tsp kosher salt
- 1 large egg
- 2 tbsp everything bagel seasoning
Instructions:
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Add the cottage cheese to a food processor and pulse until completely smooth and velvety. Note: It should look like thick yogurt.
- In a large bowl, whisk the self rising flour and kosher salt together.
- Pour the pureed cottage cheese into the flour mixture.
- Use a spatula to fold the ingredients until a shaggy dough forms.
- Turn the dough onto a floured surface and knead 4–5 times until cohesive and tacky.
- Divide the dough into 4 equal portions and roll them into 6 inch ropes.
- Join the ends of each rope to form a circle, pinching firmly to seal.
- Brush the tops with the beaten egg and sprinkle heavily with everything seasoning.
- Bake for 25 minutes until golden brown and firm.
