Ingredients:
- 3 ripe bananas, mashed
- 1.5 cups grated zucchini
- 0.5 cup neutral oil
- 2 large eggs
- 0.5 cup sour cream
- 0.75 cup brown sugar
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- 0.5 tsp baking powder
- 1 tsp ground cinnamon
- 0.5 tsp salt
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line with parchment paper. Grate the zucchini using a box grater.
- In a large bowl, whisk together the eggs and brown sugar. Stir in mashed bananas, grated zucchini, oil, sour cream, and vanilla extract until the batter is uniform.
- Sift the flour, baking soda, baking powder, cinnamon, and salt into the wet ingredients. Gently fold the mixture together with a spatula until no dry flour streaks remain.
- Pour batter into the prepared pan and bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes before removing.
