Ingredients:

  • 3 ripe bananas, mashed
  • 1.5 cups grated zucchini
  • 0.5 cup neutral oil
  • 2 large eggs
  • 0.5 cup sour cream
  • 0.75 cup brown sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 1 tsp ground cinnamon
  • 0.5 tsp salt

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line with parchment paper. Grate the zucchini using a box grater.
  2. In a large bowl, whisk together the eggs and brown sugar. Stir in mashed bananas, grated zucchini, oil, sour cream, and vanilla extract until the batter is uniform.
  3. Sift the flour, baking soda, baking powder, cinnamon, and salt into the wet ingredients. Gently fold the mixture together with a spatula until no dry flour streaks remain.
  4. Pour batter into the prepared pan and bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes before removing.
